Ìrú and Ògìrì: The Fermented Base
Before industrially produced bouillon and monosodium glutamate seasoning cubes entered West African kitchens, the savory, umami depth of Yoruba cooking came from alkaline-fermented seeds, chiefly ìrú, made from the African locust bean, and ògìrì, made from fermented oil-rich seeds. Ògìrì: Fermented Oil Seeds

The Lipid Canvas: Ẹ̀pọ̀ Pupa in the Flavor System
Unrefined red palm oil, ẹ̀pọ̀ pupa, pressed from the mesocarp of the oil palm fruit, is the primary cooking fat and coloring agent of Yoruba cuisine. What concerns this file is ẹ̀pọ̀ pupa's culinary behavior once it reaches the pot, which varies sharply with how heat is applied to it.
Used raw or only gently warmed, palm oil retains its full beta-carotene content, its deep crimson-orange color, and a fruity aroma, and this is the form added directly to water-based draw soups without a separate frying step. Within cooking practice, the shift was thorough: today's base Yoruba pepper mixture is built almost entirely from three Capsicum varieties, with the older indigenous spices retained as secondary or occasional seasonings rather than as the primary source of heat.
Contemporary Yoruba cooking organizes Capsicum into three functional roles. Tatàṣe (Capsicum annuum), large, thick-fleshed, and comparatively mild, supplies body, natural sweetness, and the deep red color of a finished stew, moderating the heat of the sharper chilies blended with it. Ata rodo (Capsicum chinense, Scotch bonnet), the aromatic center of the mixture, contributes floral notes alongside sustained, intense capsaicin heat. Salt
Salt, iyọ̀, was historically scarce inland across Yorubaland and reached the interior by two routes: solar evaporation of seawater along the coast and lagoon country, documented as an occupation of coastal communities such as those around the Lagos lagoon and the Badagry littoral alongside fishing and farming, and long-distance overland trade bringing Saharan rock salt south along the same caravan networks that supplied horses, natron, and North African goods to Ọ̀yọ́ and the interior kingdoms, a route treated in its full trading context in Economy, Craft and Trade (slug: history-economy-and-trade) . Salt's value on the trans-Saharan trade, where it was carried thousands of kilometers by camel caravan and at times traded close to its weight in gold in the wider West African interior, is part of a much larger regional economic history that this file does not repeat, but the basic fact that Yoruba households depended on an imported, non-local mineral for a taste that touches nearly every dish is worth stating plainly: unlike the pepper complex or the fermented condiments, which the region could grow or ferment for itself, salt was a genuine trade dependency running back through the same caravan and coastal networks that moved kola, cloth, and slaves.

A note on two cut proverbs. Abiodun's book is real and is a work of art history and aesthetics, which makes a pair of cooking proverbs an odd fit for it. Open web searches run for this file found no trace of either couplet in the wording given, in Abiodun or in any Yoruba proverb collection, and turned up only unrelated pepper and salt proverbs. That is weak negative evidence rather than proof of absence: this file could not search the full text of Abiodun's book, nor the full text of Owomoyela's Yoruba Proverbs (University of Nebraska Press, 2005), and either could contain material these searches missed. Both quotations are cut, because a quotation and a named translator that cannot be shown to be real is the more serious error in this corpus, and because sibling files in this section have already found fabricated scholar-attributed proverbs in drafts from the same source. The underlying cultural claim, that pepper and salt are both treated as markers of a properly finished dish rather than optional seasoning, is retained as analysis resting on the ethnographic record on Yoruba cooking ; the specific proverbs are not. A later pass with full-text access should retry both before treating them as settled inventions.
Fermentation, Flavor Science, and the Question of Industrial Seasoning

Ritual and Taboo: Fats by Òrìṣà
Yoruba ritual food practice sorts cooking fats and certain seasonings by the temperament of the òrìṣà being served, and this sorting is consistent with, and best read alongside, the fuller treatment of food-specific taboo across the whole òrìṣà pantheon in [Food, Ritual, and Taboo] (slug: food-ritual-and-taboo), which this file does not duplicate. What belongs here is the logic connecting fat choice to the flavor system already described above.
Ẹ̀pọ̀ pupa, red palm oil, is treated as an appropriate and often required offering substance for hot, martial òrìṣà, prominently Ògún, whose shrine offerings Samuel Johnson's 1921 description records as including palm oil poured over a granite stone at the base of the shrine tree alongside the blood of a sacrificed animal, generally a dog; this specific description is documented directly in Ògún (slug: ogun), which this file cross-references rather than repeats . Bolaji Idowu's Olódùmarè: God in Yoruba Belief (Longmans, 1962) is the standard mid-twentieth-century source most often cited for the general pattern connecting palm oil to hot, active òrìṣà and shea butter to Ọbàtálá's cool worship; this file was able to confirm the book is genuinely foundational Yoruba theological scholarship and that the underlying ritual facts it is cited for are independently corroborated by Ọbàtálá / Òrìṣàńlá and Ògún, but could not directly access the book's text to confirm the specific page range or the exact phrase "indispensable appeasement substance." The claim is kept at confidence: medium on that basis: the substance is right and independently corroborated within this corpus, the precise page pointer is not independently confirmed. A second citation, to J. State of the verification pass
This file went through two verification passes. The first pass produced bibliographic detail, volume numbers, page ranges, a DOI, that had not actually been checked against any record; that error was caught, disclosed, and stripped out rather than left standing. A second pass then independently confirmed the citations the first pass had only guessed at.
